In terms of technology, the use of complex food additives of the "PRAM" series is reduced to
the uniform treatment of the surface of the cooled raw material with a composition in the amount of
0,4-0,8% of the mass of the product by irrigation, immersion or massaging.
In our case, the immersion method of 0.05% solution was used. Raw materials were kept at a
temperature of 35-40°C for 40 minutes.
