Materials and research methods. The research was conducted in the accredited testing 
laboratory "Food Safety" of the Almaty Technological University and the department "Food Safety 
and Quality". 
Object of research: horse collagen-containing raw material, complex food supplement 
"PRAM". 
Determination of microbiological indicators: quantity: yeast and mold fungi according to 
GOST 10444.12-88; Escherichia coli bacteria group - GOST 31747-2012; pathogenic, including 
salmonella - GOST 31659-2012. 
Complex food additive "PRAM" is used as a food additive that extends the shelf life during 
processing and storage of fresh meat (breast, half-breast, cuts), as well as in the production and storage 
of meat products, semi-finished products and meat cooking. "PRAM" allows to increase the shelf life 
of meat by more than 50%. 
Complex food supplements of the "PRAM" series are a composition based on an aqueous 
solution of propylene glycol, citric acid and plant extracts. Propylene glycol provides optimal product 
moisture, structures water; citric acid stabilizes the pH of the product during processing and storage. 
The combination with extracts of plants (linden flowers, rolled oats, plantain, sea buckthorn and 
grapes), showing synergy in suppressing the growth of a wide range of microorganisms spoiling meat 
and meat products, incl. Aspergillus, Pseudomonas, Thamnidium, Rhizopus and Cladosporium, etc., 
provides the declared unique antimicrobial properties of series "PRAM" [15].

In terms of technology, the use of complex food additives of the "PRAM" series is reduced to 
the uniform treatment of the surface of the cooled raw material with a composition in the amount of 
0,4-0,8% of the mass of the product by irrigation, immersion or massaging. 
In our case, the immersion method of 0.05% solution was used. Raw materials were kept at a 
temperature of 35-40°C for 40 minutes.
