A. Christmas pudding – a special rich pudding eaten at Christmas. It is made with lots of dried fruit, eggs, suet and very little flour. The pudding is made before Christmas and is boiled in a basin for hours and then again for hours on Christmas Day. It will keep for a long time.

B. Cornish pasty – meat, vegetables and seasoning cooked in a case of pastry. It used to be the main food of Cornish miners and fishermen many years ago, because it was a convenient meal to take to work. The word "pasty" applies to any pie of meat, jam, etc. enclosed in paste and baked without a dish.

C. Irish stew – a dish composed of pieces of mutton, potatoes and onions stewed together. It is cooked very slowly for about three hours in a pot with a tightly fit­ting lid. Irish stew should be thick and creamy, not thin and watery.

D. Dumplings – a mixture of flour and suet cut into small lumps and boiled in a simmering soup. Sometimes served with jam or syrup as a separate dish. Solid as can­non-balls, heavy as lead, they were the British schoolboys' favourite food. “Norfolk dumpling” is a jocular nickname for the inhabitant of Norfolk.

E. Scone – a large round cake made of barley meal or oatmeal or wheat flour baked on a griddle. There are many varieties of scones: soda, butter, treacle scones, brown scones made of whole meal, etc. The Scots make “sweetie scones” with raisins, currants and spices. In Devon, scones are very popular item of food, served with cream tea. The name must be an adoption of Middle Low German “schon­brot” (fine bread).

F. Yorkshire pudding – a pudding made of flour, eggs and milk baked in an oven. It is a traditional accom­paniment to roast beef. In Yorkshire it is usually cooked in a big quadrant-shaped form and served as a separate course.

G. Bubble and squeak – a dish of slices of underdone beef, fried and seasoned, laid on cabbage, boiled, strained, and fried in dripping. The name refers to the sounds made in cooking this dish. Some cooks will add boiled potatoes or replace cabbage with broccoli, sprouts or other cooked greens. This dish is cooked in millions of homes, every Monday, to finish the remains of Sunday dinner.

Before a trip to the United States a Frenchman heard many tales about people who had problems with getting good food and good service in the restaurants in America.

On his first day in the United States, when the Frenchman wanted to have dinner, he went from restau­rant to restaurant but he couldn't get a meal − it was a dinner hour, and there were so many people inside that the waiters didn't even want to talk to him.

After some time, very tired and hungry, the Frenchman came to a small eating place. To his surprise, a waiter met him at the door, seated him at one of the several empty tables, and asked:

"What will the gentleman order?"

"A plate of beef and a few friendly words."

A few minutes later the waiter put a hot plate of beef before the Frenchman.

"Well," said the man happily. "The beef looks nice. And what about those few friendly words?"

The waiter took a sheet of paper and wrote, "Don't eat that beef."

Je suis étudiant. Mes parents habitent non loin de l’université. Ma mère est une bonne cuisinière. Quand je me souviens des plats qu'elle prépare, 1'eau coule dans ma bouche. Je ne peux pas dire que je suis gourmand mais j'aime bien manger. Les étudiants n'ont pas beaucoup de temps libre et n'ont pas assez d'argent pour visiter les restaurants. Nous prenons les repas à la cantine estudiantine. C'est très commode et bon marché. Moi, j'habite le foyer. Chaque matin je prends une tasse de thé ou de café avec du pain et du beurre et je vais à1'institut. A midi ou après les cours je passe à la cantine où je déjeune. D'habitude c'est du potage, une salade de légumes, de la viande ou du poisson et de la compote. Le soir je dois travailler pour préparer mes devoirs. C'est pourquoi je dine à la cantine qui se trouve dans le foyer, ça ne prend pas beaucoup de temps, c'est une cantine à self-service. La salle de la cantine est spacieuse. Chaque étu­diant se sert lui-meme. On lit le menu où figurent de differents plats: roti de boeuf ou de porc, poisson grille, garnis de frites, de légumes ou de gruau. Au dessert on propose des fruits, des gateaux, des brioches, de la compote, du thé ou du café au lait. Chacun choisit à son gout, met les plats sur un plateau et se dirige vers la caisse ou 1'on paye. Ensuite on prend un couvert,c’est-à-dire, une cuiller, une fourchette, un couteau et on se met à table, parfois j'achete quelque chose en ville et je prépare mon diner moi-meme. A chaque étage du foyer il y a une cuisine où sont placés quelques fourneaux à gaz, une table, il y a aussi tout le necessaire pour préparer les repas: casseroles, poeles, assiettes.

Parfois je dine avec mes amis en ville. Dans ce cas on choisit un café où on peut manger des plats nationaux: smajnis, draniki, crepes et beaucoup i'autres-choses délicieuses. Les jours de fete je passe chez mes parents. Ma mère prépare du borchtch que j'aime beaucoup, elle fait aussi des gateaux, des tartes. Après quelques jours de mon séjour à la maison je sens que j'ai grossi d'un ou de deux kilos. Je n'ai pas la force de renoncer à cette bonne cuisine de ma mère. Mais ce n'est pas dangereux. Dans une semaine de travail serieux et consciencieux mes kilos disparaissent et je deviens mince comme autrefois.

My family. Our traditions.

My family is not very large. I have a father, a brother and a sister. We all live together in a new flat in one of the industrial districts of Minsk. My father Igor Ivanovich is 45 years old. He is a tall and well-built man with short black hair and grey eyes. He works at a big automobile plant as an engineer. He likes his work and spends most of his time there. By character my father is a quite man, while my mother is energetic and talkative. Her name is Olga Petrovna. She is a teacher of music and plays the piano well. My mother always has a lot of work to do about the house and at school. She is a busy woman and we all help her. My sister’s name is Alla. Like her mother Alla has blue eyes and lovely fair hair. She is a very good-looking girl. Alla is three years younger than me. She is a pupil of the 9th form. She does well at school and gets only good and excellent marks. Literature is her favourite subject and she wants to become a teacher, the same as me. My name is Tanya. Last year I left school and tried to enter the University. But I failed in my exams. For a year worked at school as a secretary and attended preparatory courses. Now I’m again an applicant for entry to the philological faculty of the University. I hope to be lucky this time. Our family is very united. We like to spend time together. In the evenings we watch TV, read books and newspapers, listen to music or just talk about the events of the day. Our parents don’t always agree to what we say but they listen to our opinion. All of us like to spend our week-ends out of town. We often go to the village where our grandparents live. They are old-age pensioners now but prefer to live in the country. My grand-grandmother is still alive. She lives in my grandmother’s family and is always glad to see us. She is in poor health and asks us to come and see her more often. I also have many other relatives: uncles, aunts, cousins and many friends. We are happy when we are together.


Leisure time. Travelling.

Everybody sometimes has free time. Somebody prefers only to sleep in their leisure time, but most of us prefer to do a great number of interesting things. It may be reading, various types of sport games, watching TV, listening to music and so on. If we have a few days or a week, we prefer to go to the attractive places. Many people think that students have too much leisure time, but in my opinion, they are wrong. We are very busy. Many students have three or four periods a day and go to university five or six days a week. Even during weekends we get ready for our classes. And we just have no time to go somewhere. Some of us work after classes. As for me, a large part of my free time is devoted to reading. I like to read books about other countries, other times and other worlds. I also read books about history of our country. Besides reading I like to do physical exercises. My friends and I often get together after classes and play basketball, football or other active games. But my favorite hobby is travelling. I usually travel in summer and often it is a trip to the south, to the warm sea. I think all people must have other occupations besides their basic work, because it extends the boundaries of the familiar world and teaches us something new about people and things.

Modern life is impossible without travelling. Thousands of people travel every day either on business or for pleasure. They can travel by air, by train, by see or by road.

Travelling by air is the fastest and the most convenient way, but it is the most expensive too. To my mind, travelling by train is more interesting. You can see interesting places of the country you are travelling through. Modern trains have very comfortable seats. There are also sleeping carriages and a dining-carrige which make even the longest journey enjoyable.

Travelling by sea is very popular. On board of ship you can enjoy your trip. There are tennis and badminton grounds, a swimming-pool, a cinema and a dancing hall there. Some people prefer travelling by car. If you have your own car you may go to the Black Sea, where there are a lot of rest-houses, sanatoriums and tourist camps. In the daytime you can have a nice opportunity to play volleyball, swim in the warm water of the sea and sunbathe. In the evening you like to sit on the beach watching the sea and enjoying the sunset.

Shopping

When we want to buy something, we go to a shop. There are many kinds of shops in every town or city, but most of them have a food supermarket, a department store, men's and women's clothing stores, a grocery, a bakery and a butchery.

I like to do my shopping at big department stores and supermarkets. They sell various goods under one roof and this is very convenient. A department store, for example, true to its name, is composed of many departments: ready-made clothes, fabrics, shoes, sports goods, toys, china and glass, electric appliances, cosmetics, linen, curtains, cameras, records, etc. You can buy everything you like there.

There are also escalators in big stores which take customers to different floors. The things for sale are on the counters so that they can be easily seen. In the women's clothing department you can find dresses, costumes, blouses, skirts, coats, beautiful underwear and many other things. In the men's clothing department you can choose suits, trousers, overcoats, ties, etc.

In the knitwear department one can buy sweaters, cardigans, short-sleeved and long-sleeved pullovers, woollen jackets. In the perfumery they sell face cream and powder, lipstick, lotions and shampoos.

In a food supermarket we can also buy many different things at once: sausages, fish, sugar, macaroni, flour, cereals and tea. At the butcher's there is a wide choice of meat and poultry. At the bakery you buy brown and white bread, rolls and biscuits.

Another shop we frequently go to is the greengrocery which is stocked by cabbage, potatoes, onions, cucumbers, carrots, beetroots, green peas and what not. Everything is sold here ready-weighed and packed. If you call round at a dairy you can buy milk, cream, cheese, butter and many other products.

The methods of shopping may vary. It may be a self-service shop where the customer goes from counter to counter selecting and putting into a basket what he wishes to buy. Then he takes the basket to the check-out counter, where the prices of the purchases are added up. If it is not a self-service shop, and most small shops are not, the shop-assistant helps the customer in finding what he wants. You pay money to the cashier and he gives you back the change.
